This September, Daydream Island Resort will launch their first Chef in Residence series with two of Australia’s most celebrated chefs, bringing 14 days of culinary delight to the island.

Jesse McTavish and Adam D’Sylva take the helm of the kitchen for a week each.

Jesse portraitSailing into Daydream Island from 9th – 15th September, Bondi local and former Head Chef of iconic North Bondi Fish, Jesse McTavish will be first to take the reins of Daydream’s Inkstone Bar & Grill. As a keen forager, Jesse loves to experiment with locally sourced ingredients to plate up a modern Australian cuisine, with fresh yet bold flavours. Over carefully curated share plates, guests can discover Jesse’s passion for unique ingredients with menu highlights including 7-day aged swordfish belly, sashimi of local fish, and a not-to-miss Daydream ‘Pavlova’ dressed in seasonal fruits and mascarpone.

Following on from Jesse’s Island residency, renowned Melbourne chef Adam D’Sylva from Coda Restaurant will take over the Infinity kitchen, bringing his signature love of contrasting cuisines to the Island. Having established an enviable reputation as one of Australia’s most prominent chefs, Adam thanks his Indian-Italian heritage for fostering his love of fusion cuisine. From 16th – 22nd of September, guests can enjoy his spotlight on key ingredients like spanner crab and betel leaf, quail and lychee, and a young coconut panna cotta to take diners on a taste bud journey, marrying Australia’s world-famous seafood and the aromatics of Asian cuisine.Adam D'Sylva Coda Portrait

Daydream Island’s Executive Chef, said “I’m excited to work with both Chefs and to take them to meet some of our local suppliers. Queensland has some of the best produce in Australia and I know both Jesse and Adam will very much enjoy our Island life”.

The launch of this exciting new Chef in Residency series comes just three months after the resorts official re-opening. Through the $140m room refurbishment and new bar and dining offerings, Daydream Island has continued to cement itself as one of the Whitsunday’s most spectacular holiday destinations.
